Garlic Delight -scoop portions- mix well

4 tablespoons butter (let soften)

1 oz. Lemon Juice

1 teaspoon Dill Weed

2 teaspoons Garlic paste

1 teaspoon Black Pepper


Summer Mignonette- scoop portions- mix well

1 cucumber peeled and grated

2 Tbsp  finely chopped spinach

2 oz apple cider vinegar

1 Tbsp Humboldt Honey

1 Tbsp Ginger


Oysters A La Russe- scoop portions, proportions based on  per tomato.

1 tomato seeded and finely chopped

2 Tbsp. Humboldt Vodka

1 tsp. lemon juice

½ tsp. prepared horseradish

½ tsp. Humboldt Hot Sauce- Island Style

pinch of sugar

pinch of salt

1 Tbsp. chives finely chopped

½  tsp. black pepper

Combine all ingredients except tomatoes and reduce on burner (bring to simmer for 2 min.).  Once cooled sufficiently add tomatoes, mix and put in jar.
